An appetizer for the Big Game.
Doesn’t this look yummy?

Queso fundido is a true party trick. It’s likely the lowest effort, highest reward party dip. It’s always a crowd pleaser, and it’s endlessly adaptable. Do a mix of Monterey, cheddar, manchego, or mozzarella. Basically, any of your favorite melty cheeses will work well here. The chorizo is traditional and adds a little heat. Go for the Mexican variety here instead of the Spanish, which is usually dried. Mexican chorizo can be found both cooked and uncooked. We used a pre-cooked version here, but if you can only find uncooked that is fine! Remove it from its casing and start the same by cooking it until cooked through, breaking the meat up with a wooden spoon as you cook.
